Makes 10 pies
mini muffin tin with 10 holes
oil to grease
4 sheets of puff pastry (Borgs is vegan)
1 1/2 packets of tempeh, chopped into small chunks7 button mushrooms, diced
1 teaspoon of cumin powder
1 tablespoon of traditional gravy
1 tablespoon of vegan beef stock powder
1 1/2 cups of hot water
In a large frying pan brown the tempeh and mushrooms with cumin powder and a little oil
In a jug mix the hot water, cumin powder, gravy and beef stock
Pour the gravy mixture into the frying pan and simmer until the gravy thickens
Grease your oven pan with a little oil
Lay out the pastry on a bench leaving the plastic on the bottom so it doesn't stick to the bench
Use a small mug as a guide to cut 10 circles and place the circles into the muffin tin ensuring the pastry touches the bottom and comes up the sides
Pour even amounts of the tempeh mixture onto the pastry in the muffin tin holes
Using a smaller glass trace 10 smaller circles and place them on top of the muffin holes ensuring it touches the side of the pastry already in there
Lightly oil the tops of the pies
Place in oven for 20 minutes or until slightly brown on top and pastry puffed
Scoop out onto a plate and serve with sauce
